Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps the rice cook evenly.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spoon. Allow the rice to cool to room temperature.

Prepare Tuna Filling
In a bowl, combine the drained canned tuna with mayonnaise. Mix well until the tuna is coated.

Assemble the Roll
Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down on the mat. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving about 1 inch at the top edge. Place a line of the tuna mixture, cucumber, and avocado along the center of the rice.

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
