    Prepare the Ingredients

    Wash and chop your chosen vegetables (spinach, tomatoes, peppers, onions, broccoli, and mushrooms) into small pieces. If using cheese, shred or crumble it.

    Beat the Eggs

    In a mixing bowl, crack the eggs and add salt and black pepper. Whisk together until well combined.

Cooking

    Heat the Pan

    In a non-stick skillet, heat the butter or oil over medium heat until hot but not smoking.

    Cook the Vegetables

    Add the chopped vegetables (choose any combination) to the skillet and sauté for about 3-4 minutes until they are slightly softened.

    Add the Eggs

    Pour the beaten eggs over the sautéed vegetables. Tilt the pan gently to ensure the eggs cover the vegetables evenly.

    Cook the Omelet

    Let the omelet cook for about 2-3 minutes without stirring, until the edges begin to set. If using cheese, sprinkle it on one half of the omelet.

    Fold and Serve

    Using a spatula, carefully fold the omelet in half over the cheese (if using) and cook for an additional minute. Slide the omelet onto a plate and serve warm.
