Eggs

Prepare the Eggs
In a small bowl, crack the two eggs and whisk them until well combined. You can add a pinch of salt and pepper for flavor.

Cook the Eggs
Heat a non-stick skillet over medium heat. Pour the whisked eggs into the skillet and cook for about 2-3 minutes, or until the edges start to set. Flip the eggs carefully and cook for an additional 1-2 minutes for over-easy, or longer for more cooked eggs.

Mix Dry and Wet Ingredients
In a large bowl, mix the flour, baking powder, and sugar together. In another bowl, combine the milk, the additional egg, melted butter, and vanilla extract.

Combine Batter
Add the wet mixture to the dry ingredients and stir until just combined. The batter may be slightly lumpy, which is okay.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter onto the skillet for each pancake.

Flip and Finish
Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until golden brown.

Cook the Bacon
In the same skillet, place the bacon slices and cook over medium heat until crispy, about 3-4 minutes per side. Remove and let drain on paper towels.

Cook Potatoes
Heat the olive oil in a large skillet over medium heat. Add the potatoes and cook for about 10-15 minutes, stirring occasionally until they start to soften.

Prepare Toast
Toast the slices of bread until golden brown. Spread butter on top as soon as they come out of the toaster.
