Prepare the Potatoes
Wash and peel the potatoes, then cut them into small cubes.

Cook the Home Fries
In a large skillet, heat olive oil over medium heat. Add the onion and bell pepper, cooking until softened.

Cook the Canadian Bacon
In a skillet, cook the Canadian bacon over medium heat until warmed through and slightly crispy, about 2-3 minutes per side.

Toast the English Muffins
Split the English muffins and toast them until golden brown.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and a pinch of salt. Place the bowl over a pot of simmering water, whisking constantly, and slowly drizzle in melted butter until the sauce thickens. Season with additional salt and cayenne pepper to taste.

Assemble the Dish
On each toasted English muffin half, place a slice of Canadian bacon and top with a poached egg. Drizzle with hollandaise sauce and serve alongside home fries.
