Poach for 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

Corned Beef Hash

    Cook the Corned Beef Hash

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and bell pepper, sautéing until softened (about 3-4 minutes). Add the diced corned beef and potatoes, seasoning with salt and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy.
