Preparation of Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine 3 tablespoons of mayonnaise, 1 tablespoon of chipotle peppers in adobo sauce (finely chopped), 1 teaspoon of lime juice, and 1 teaspoon of garlic powder. Mix well until smooth and set aside.
Assembling the Panini

Prepare the Ingredients
Slice the grilled chicken breast into thin strips. Slice the tomato and red onion thinly.

Spread the Chipotle Mayo
Spread a generous amount of the prepared chipotle mayo on one side of each slice of ciabatta bread.

Grill the Panini
Preheat a panini press or skillet over medium heat. If using a skillet, add a little oil to prevent sticking. Place the assembled panini in the press or skillet, and grill for about 4-5 minutes until the bread is golden brown and the cheese is melted.

Serve
Once grilled, remove the panini from the heat and let it cool for a minute. Cut in half and serve immediately.
