Preparation of Sausage Mixture

In a large mixing bowl, combine ground pork and ground beef until well blended.

Add salt, black pepper, garlic powder, onion powder, paprika, crushed red pepper flakes, sage, and thyme to the meat mixture.

Use your hands or a spoon to thoroughly mix the spices into the meat until evenly distributed.
Stuffing Sausage Links

Rinse the natural hog casings under cold running water and soak them in warm water for about 30 minutes.

Fit a sausage stuffer with a casing and fill it with the sausage mixture, being careful not to overstuff. Tie off the ends securely.

Twist the sausages into links of your desired length, usually about 6 inches each.
Cooking Sausage Links

In a large skillet, heat olive oil over medium heat.

Add the sausage links to the skillet and cook for about 8-10 minutes, turning occasionally until they are browned and cooked through.

Use a meat thermometer to check that the internal temperature of the sausages reaches 160°F (71°C).
