Making Raspberry Syrup

Prepare the Raspberry Syrup
In a medium saucepan, combine the fresh raspberries, granulated sugar, and water. Heat the mixture over medium heat, stirring occasionally until the sugar is completely dissolved and the raspberries have broken down, about 5-7 minutes.

Strain the Syrup
Once the mixture has thickened slightly, remove it from heat and let it cool for a few minutes. Then strain the mixture through a fine mesh sieve into a bowl, pressing down on the solids to extract as much liquid as possible. Discard the raspberry seeds and pulp. Let the syrup cool completely.

Juice the Limes
While the raspberry syrup is cooling, cut the fresh limes in half and use a citrus juicer to extract the juice. You will need about 1/2 cup of fresh lime juice.

Combine Ingredients
In a large pitcher, combine the cooled raspberry syrup and fresh lime juice. Stir well to mix the flavors together.

Add Soda Water
Slowly add the soda water to the pitcher, stirring gently to combine without losing too much carbonation.
Serving the Drink

Fill glasses with ice cubes and pour the raspberry lime mixture over the ice.
