Cooking the Fries

Prepare the fries
Preheat the oven to 425°F (220°C). Spread the frozen French fries on a baking sheet in a single layer. Drizzle with vegetable oil and toss to coat evenly.

Bake the fries
Bake the fries in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
Assembling the Loaded Fries

Layer the toppings
Once the fries are cooked, remove them from the oven and transfer them to a large serving platter or leave them on the baking sheet. Evenly distribute the shredded pork over the fries.

Add cheese and vegetables
Sprinkle the shredded cheese over the pork, followed by the diced red peppers and jalapeño slices.

Melt the cheese
Return the loaded fries to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle with chopped chives before serving.
