Prepare the Potatoes
Peel and dice the potatoes into small cubes. Rinse them under cold water and set aside.

Chop the Vegetables
Dice the onion and green bell pepper into small pieces.

Prep the Corned Beef
If using leftover corned beef, dice it into small cubes. If using canned corned beef, break it up into small pieces.

Cook the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, black pepper, garlic powder, and paprika. Cook for about 10-15 minutes, stirring occasionally until the potatoes are golden brown and tender.

Add Vegetables
Once the potatoes are cooked, push them to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side and sauté the chopped onion and green bell pepper for about 5 minutes until they are soft.

Finish Cooking
Cook the mixture for an additional 5-10 minutes, allowing the corned beef to heat through and develop a bit of a crust on the bottom. Stir occasionally to prevent sticking.
