Crust Preparation

Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for 10 minutes, then remove and let cool.
Filling Preparation

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Gradually add in the granulated sugar until well incorporated.

Add Remaining Ingredients
Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, add the all-purpose flour and mix until just combined.

Pour Filling into Crust
Pour the cream cheese filling over the cooled crust in the springform pan, smoothing the top with a spatula.
Baking

Bake the Cheesecake
Bake in the oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for about 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to fully set.

If desired, toss fresh berries with powdered sugar to create a sweet topping. Serve on top of the chilled cheesecake.
