Method
Salad Preparation
- 1
Prepare the Lettuce
Wash the romaine lettuce thoroughly under cold water. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water. Tear the lettuce leaves into bite-sized pieces and place them in a large salad bowl.
- 2
Add Crostini and Cheese
Add the crushed crostini to the bowl with the romaine lettuce. Grate the Pecorino Romano cheese and sprinkle it over the top of the salad.
Dressing Preparation
- 3
Make the Dressing
In a mixing bowl, mince the garlic clove and anchovy fillets. Add them to the bowl along with Dijon mustard, Worcestershire sauce, and lemon juice. Whisk together until well combined.
- 4
Emulsify the Dressing
Slowly drizzle in the olive oil while continuously whisking to create a smooth and creamy dressing. Season with salt and black pepper to taste.
Assembly
- 5
Combine Salad and Dressing
Pour the prepared Caesar dressing over the romaine lettuce, crostini, and cheese. Toss gently to ensure everything is evenly coated with the dressing.
- 6
Serve
Serve immediately while the salad is crisp. Optionally, you can garnish with additional Pecorino Romano cheese and freshly cracked black pepper.
