Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 325°F (165°C). Ensure the oven rack is in the lower third of the oven.
- 2
Score the Ham
Place the bone-in ham on a cutting board. Using a sharp knife, score the surface of the ham in a diamond pattern, about 1/4 inch deep. This allows the glaze to penetrate the meat.
- 3
Insert Cloves
Press whole cloves into the intersections of the diamond cuts for added flavor and visual appeal.
Glazing
- 4
Prepare the Glaze
In a medium bowl, mix together the brown sugar, honey, Dijon mustard, and pineapple juice until well combined. This will be your glaze.
- 5
Apply the Glaze
Pour half of the glaze over the scored ham, making sure to cover all the surfaces. Reserve the other half for basting later.
Baking
- 6
Bake the Ham
Place the ham in a roasting pan and cover it with aluminum foil. Bake in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 140°F (60°C).
- 7
Baste the Ham
Remove the foil during the last 30 minutes of baking. Baste the ham with the reserved glaze every 10 minutes to develop a nice caramelized crust.
Serving
- 8
Rest and Slice
Once baked, remove the ham from the oven and let it rest for 15-20 minutes before slicing. This helps the juices redistribute.
- 9
Optional Garnish
If desired, add pineapple rings and maraschino cherries to the ham for a festive presentation before serving.
