Pie Crust Preparation

    Make the Pie Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough begins to come together. You may not need all the water.

    Chill the Dough

    Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling Preparation

    Prepare the Apples

    While the dough chills, in a large bowl, combine the sliced Granny Smith apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, cornstarch, and vanilla extract. Toss until the apples are well coated.

Assembling the Pie

    Roll Out the Dough

    Preheat your oven to 425°F (220°C). On a floured surface, roll out one disc of dough to fit a 9-inch pie pan. Place it in the pan and trim the excess dough.

    Add Filling

    Pour the apple filling into the pie crust, spreading it evenly.

    Top with Second Crust

    Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.

    Bake the Pie

    Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.

    Cool the Pie

    Remove the pie from the oven and allow it to cool for at least 30 minutes before slicing.
