Sausage Preparation

Cook the Sausages

In a large skillet over medium heat, add the pork sausages. Cook for about 10-12 minutes, turning occasionally, until browned and cooked through.

Polenta Preparation

Cook the Polenta

In a saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Gradually whisk in the polenta, reducing the heat to low. Stir continuously for about 20-25 minutes until thickened. Stir in the butter and grated Parmesan cheese until well combined.

Salad Preparation

Prepare the Arugula Salad

In a large bowl, toss the arugula with olive oil and 10 year aged balsamic vinegar. Season with salt and pepper to taste.

Assembly

Serve the Dish

On each plate, serve a portion of soft polenta topped with the cooked sausages. Add a side of arugula salad. Drizzle with additional balsamic vinegar if desired.
