Mousse Preparation

Prepare the Livers

Clean the chicken livers by removing any connective tissue and pat them dry with a paper towel.

Sauté Vegetables

In a skillet, melt 50 grams of butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

Cook the Livers

Add the chicken livers to the skillet, and cook for about 5-7 minutes until browned but still slightly pink in the center. Pour in the brandy and let it evaporate for 1-2 minutes.

Blend the Mixture

Transfer the liver mixture to a food processor. Add the remaining butter, heavy cream, thyme, salt, and pepper. Blend until smooth and creamy.

Chill the Mousse

Transfer the mousse to a serving dish or ramekins, cover with plastic wrap, and refrigerate for at least 2 hours to set.
