Prepare the Chicken
In a bowl, coat the diced chicken breast with cornstarch. Make sure all pieces are well-coated.

Heat the Oil
In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil in batches. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Stir-Fry the Vegetables
In a separate pan, stir-fry the green onions and bean sprouts in a little oil for about 2-3 minutes until tender but still crisp.

Combine and Serve
Add the fried chicken to the stir-fried vegetables. Pour the sweet and sour sauce over the top and toss to combine. Serve immediately, garnished with sesame seeds.
