Cook the Steak
Season the New York Striploin with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare. Adjust the time for desired doneness. Remove from skillet and let rest for a few minutes before slicing.

Prepare the Eggs
In a bowl, whisk together the eggs, chives, salt, and black pepper. In a non-stick skillet, melt the butter over medium-low heat. Pour the egg mixture into the skillet. Stir gently until the eggs are softly set and slightly runny, about 3-4 minutes. Remove from heat and let sit for a minute to finish cooking.
Rosemary Hash Browns

Make the Hash Browns
Peel and grate the potatoes. Rinse under cold water to remove excess starch and dry thoroughly. In a skillet, heat olive oil over medium heat. Add the grated potatoes, rosemary, salt, and black pepper. Press down with a spatula and cook for 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes until crispy.
