Latkes Preparation

    Prepare the Potatoes

    Peel and grate the russet potatoes and onion using a box grater or food processor. Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients

    In a mixing bowl, combine the grated potatoes, onion, egg, flour, salt, and pepper. Mix well to combine.

    Fry Latkes

    In a large skillet, heat the vegetable oil over medium heat. Scoop about 1/4 cup of the mixture for each latke and flatten slightly. Fry for 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Hollandaise Sauce Preparation

    Melt Butter

    Melt the butter in a saucepan over low heat.

    Whisk Egg Yolks

    In a separate bowl, whisk together egg yolks, lemon juice, and salt until pale and thick.

    Combine and Whisk

    Slowly drizzle the melted butter into the egg yolk mixture while constantly whisking until the sauce is thick and creamy. Add cayenne pepper for flavor.

Salad Preparation

    Prepare Salad

    In a salad bowl, combine the fresh spinach and halved cherry tomatoes. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste.

Assembly

    Plate the Dish

    Serve the latkes topped with smoked steelhead salmon, drizzled with hollandaise sauce, alongside the spinach and tomato salad.
