Preparation and Assembly

    Make the Flatbread

    In a large mixing bowl, combine the Italian 00 flour, warm water, olive oil, and salt. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Let it rest for 30 minutes covered with a towel.

    Roll Out the Flatbread

    Preheat a skillet or grill over medium heat. Divide the dough into 4 equal parts and roll each part into a flat circle about 1/4 inch thick.

    Cook the Flatbread

    Cook each flatbread in the skillet or on the grill for about 2-3 minutes on each side, or until lightly browned and cooked through. Remove and set aside.

    Assemble the Flatbread

    Spread a generous layer of dill cream cheese over each flatbread. Top with slices of smoked salmon, a handful of arugula, pickled red onions, and sprinkle with capers.

    Slice the flatbreads into wedges and serve immediately.
