Preparation

    Prepare the potatoes

    Boil the fingerling potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool, then slice in half.

    Blanch the green beans

    In a separate pot, bring water to a boil. Add green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop cooking. Once cooled, drain again.

    Cook the tuna

    Season the albacore tuna with freshly cracked black pepper. Heat a skillet over medium-high heat and sear the tuna for 1-2 minutes on each side for medium-rare. Remove from heat and let rest before slicing.

    Prepare the hard-boiled eggs

    Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes before transferring to an ice bath. Once cooled, peel and cut in half.

    Make the vinaigrette

    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.

    Assemble the salad

    On a large serving platter, arrange the sliced potatoes, green beans, olives, grape tomatoes, hard-boiled egg halves, and sliced tuna. Drizzle with the vinaigrette before serving.
