Cheesecake Preparation

    Prepare the crust

    Preheat the oven to 175°C (350°F). In a bowl, mix the crumbled digestive biscuits with melted butter until well combined. Press the mixture firmly into the bottom of a springform pan to form the crust.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream, vanilla extract, and eggs one at a time, beating well after each addition until fully combined.

    Bake the cheesecake

    Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 55-60 minutes until the edges are set but the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Chill

    Remove the cheesecake from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

    Cook the berries

    In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook until the berries break down and the mixture thickens, about 10 minutes. Remove from heat and let cool.

Caramel Sauce Preparation

    Make the caramel sauce

    In a saucepan, melt the sugar over medium heat until it turns a golden color. Remove from heat and carefully whisk in the butter until melted. Slowly add the heavy cream while whisking until smooth. Let it cool slightly.
