Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
Making the Mushroom Sauce

Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the foraged mushrooms and cook for about 5-7 minutes until they are softened and golden.

Create the Sauce
Pour in the heavy cream and truffle oil, stirring well to combine. Let the sauce simmer for about 3-5 minutes until it thickens slightly. Season with salt and black pepper to taste.
Combining Everything

Combine Pasta and Sauce
Add the cooked tagliatelle to the skillet with the mushroom sauce. Toss gently to coat the pasta in the sauce, adding a little reserved pasta water if needed to loosen the sauce.

Serve
Plate the pasta and garnish with shaved Parmesan and chopped fresh parsley before serving.
