Prepare the Vegetables
Preheat your oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes, sun-dried tomatoes, and fingerling potatoes with olive oil, salt, and black pepper. Spread them evenly and roast in the oven for about 25-30 minutes, or until the potatoes are tender and the tomatoes are blistered.

Cook the Broccolini
In a separate pot, bring water to a boil and blanch the broccolini for 3-4 minutes until bright green. Drain and set aside.
Cooking the Halibut

Sear the Halibut
In a large skillet, heat 2 tablespoons of butter over medium-high heat. Season the halibut fillets with salt and pepper. Once the butter is melted and bubbling, add the halibut fillets to the pan. Cook for about 4-5 minutes on each side until golden brown and cooked through.

Serve the Dish
On each plate, place the roasted vegetables, honey-glazed carrots, and broccolini. Top with the seared halibut and drizzle with the lemon butter sauce. Finish with a sprinkle of grated Parmesan cheese.
