Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and place it on a cutting board. Cut the chicken in half and remove the backbone if desired. Rub the chicken with olive oil, salt, pepper, and lemon thyme, then place lemon halves inside the cavity.

Prepare the Potatoes
In a mixing bowl, toss the baby potatoes with olive oil, salt, pepper, and rosemary. Spread them out on a baking sheet.

Roast the Chicken and Potatoes
Place the chicken, cut side down, on the baking sheet with the potatoes. Roast in the preheated oven for about 45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.

Add the Broccolini
After the chicken and potatoes have roasted for 30 minutes, add the broccolini to the baking sheet. Continue roasting for the remaining 15 minutes.

Make the Pan Jus
While the chicken is roasting, combine drippings from the roasting pan with chicken stock and additional lemon thyme in a small saucepan. Simmer for about 5-10 minutes, adjusting seasoning with salt and pepper.
