Frying the Oysters

    Prepare the Oysters

    Rinse the fresh oysters under cold water and carefully shuck them, discarding the top shell. Place the oysters on a plate.

    Prepare the Breading

    In a shallow dish, mix together the flour, cornmeal, salt, and pepper. In another bowl, whisk together the eggs and buttermilk.

    Bread the Oysters

    Dip each oyster into the egg mixture, then dredge in the flour-cornmeal mixture until fully coated. Set aside on a wire rack.

    Fry the Oysters

    Heat the oil in a deep frying pan over medium-high heat. Once the oil is hot (about 350°F/175°C), fry the oysters in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Making the Sauce

    Mix the Sauce

    In a bowl, combine the ketchup, horseradish, chopped tarragon, lemon juice, Worcestershire sauce, and hot sauce. Mix well until smooth.
