French Toast

    Prepare the Egg Mixture

    In a large mixing bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

    Dip the Bread

    Heat a skillet over medium heat and melt 1 tbs of butter. Dip each slice of bread into the egg mixture, allowing it to soak slightly, then place it in the skillet.

    Cook the French Toast

    Cook the bread for about 3-4 minutes on each side, or until golden brown. Repeat with remaining slices, adding more butter as needed.

Fruit Compote

    Cook the Berries

    In a medium saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes.

Bacon

    Cook the Bacon

    In a separate skillet, cook the bacon strips over medium heat until crispy, about 5-7 minutes. Drain on paper towels.

Rosemary Hash Browns

    Prepare the Hash Browns

    In a large bowl, combine grated potatoes, chopped rosemary, salt, and pepper. Mix well.

    Cook the Hash Browns

    Heat olive oil in a skillet over medium heat. Add the potato mixture, pressing it down into an even layer. Cook for about 5-7 minutes until golden brown, then flip and cook the other side.

Assembly

    Serve the French toast warm with a generous spoonful of fruit compote, sliced fresh fruit, crispy bacon, and rosemary hash browns on the side.
