Preparing the Crab Cakes

Mixing Ingredients
In a large bowl, combine the Dungeness crab meat, panko breadcrumbs, mayonnaise, chopped green onions, beaten egg, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

Forming the Cakes
Shape the mixture into 8 equal-sized patties. Place them on a plate and refrigerate for at least 30 minutes to help them firm up.

Cooking the Cakes
In a large skillet, heat vegetable oil over medium heat. Cook the crab cakes for about 4-5 minutes on each side, or until they are golden brown and cooked through. Drain on paper towels.

In a small bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, lemon juice, minced garlic, paprika, salt, and black pepper until well combined.
