    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer to a bowl.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm sushi rice and gently fold it in to season the rice. Allow it to cool to room temperature.

    Prepare Fillings

    Slice the cucumber thinly and scoop out the avocado flesh, slicing it into thin strips. If the BBQ eel is not pre-sliced, cut it into manageable pieces.

    Assemble the Roll

    Place a bamboo sushi mat on a flat surface. Lay one nori sheet, shiny side down, on the mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, place a few pieces of BBQ eel, cucumber strips, and avocado slices. Sprinkle tobiko over the top.

    Roll it Up

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi if desired.
