Crab Cakes

Method

Preparation

  1. 1

    Make the Crab Cake Mixture

In a large bowl, combine the Dungeness crab meat, mayonnaise, Dijon mustard, breadcrumbs, egg, Old Bay seasoning, salt, and black pepper. Mix gently until combined, being careful not to break up the crab meat too much.

  2. 2

    Form the Cakes

Using your hands, form the crab mixture into patties, about 2 inches in diameter. Place them on a baking sheet lined with parchment paper.

  3. 3

    Chill the Crab Cakes

Refrigerate the crab cakes for at least 30 minutes to help them hold their shape while cooking.

  4. 4

    Cook the Crab Cakes

Heat the olive oil in a large skillet over medium heat. Add the crab cakes and cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and let drain on paper towels.

  5. 5

    Prepare the Arugula

In a bowl, toss the arugula with a drizzle of olive oil, salt, and pepper.

  6. 6

    Serve

Serve the crab cakes warm on a bed of arugula, with lemon tarragon aioli on the side.
