Method

Lamb Preparation

    Marinate the Lamb

    In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the rack of lamb and let it marinate for at least 1 hour or overnight in the refrigerator.

    Charbroil the Lamb

    Preheat the grill to high heat. Sear the lamb on all sides until browned, about 4-5 minutes per side. Then, move to indirect heat and cook for an additional 15-20 minutes or until the internal temperature reaches 60°C (140°F) for medium-rare. Rest before slicing.

Potato Pavé Preparation

    Layer the Potatoes

    In a greased baking dish, layer the thinly sliced potatoes, seasoning each layer with salt and pepper. Pour a mix of melted butter and heavy cream over the top. Press down firmly to compact the layers.

    Bake

    Cover with foil and bake at 180°C (350°F) for about 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and crispy on top. Allow to cool slightly before slicing.

Cinzano Demi Preparation

    Prepare the Demi-Glace

    In a saucepan, sauté finely chopped shallots in butter until translucent. Add Cinzano vermouth and reduce by half. Then add beef stock and simmer until thickened. Season to taste.

Garden Vegetables Preparation

    Sauté the Vegetables

    In a skillet, heat olive oil and add sliced carrots, zucchini, and diced bell pepper. Sauté until tender, about 5-7 minutes. Season with salt and black pepper to taste.
