Prepare the Tuna
Preheat a skillet over medium-high heat. Coat the albacore tuna steaks with olive oil, then season with salt and black pepper. Press sesame seeds onto both sides of the tuna.

Cook the Tuna
Place the tuna in the hot skillet and sear for about 1-2 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Prepare the Avocado and Tomatoes
While the tuna is resting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Dice the avocados and halved cherry tomatoes. Gently fold them together with Thai basil leaves.

Plate the Dish
Slice the seared tuna into thick slices. Arrange the avocado and tomato mixture on a plate and top with the sliced tuna. Drizzle ponzu sauce over the dish.

Serve immediately while the tuna is warm, garnished with additional Thai basil if desired.
