Preparation

    Prepare the Fries

    Preheat your oven to 425°F (220°C). Cut the russet potatoes into thin strips. In a bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.

    Bake the Fries

    Spread the potato strips on a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Cooking the Tenderloin

    Sear the Tenderloin

    Heat a skillet over medium-high heat. Season the grass-fed tenderloin with salt and black pepper. Add a little olive oil to the skillet and sear the tenderloin for 3-4 minutes on each side for medium-rare, adjusting time for desired doneness.

    Rest the Tenderloin

    Remove the tenderloin from the skillet and let it rest for 5-10 minutes before slicing.

Roasting Vegetables

    Prepare the Vegetables

    In a bowl, combine cherry tomatoes and broccolini. Drizzle with olive oil, garlic powder, salt, and black pepper. Toss to coat well.

    Roast the Vegetables

    Spread the vegetables on a baking sheet and sprinkle with parmesan cheese. Roast in the same oven as fries for the last 12-15 minutes, until tender and slightly charred.

Serving

    Plate the Dish

    Slice the rested tenderloin and serve alongside the crispy fries and roasted parmesan tomatoes & broccolini.
