Apricot-Anise Demi-Glace

Method

Cooking the Pork Chop

    Prepare the Pork Chop

    Season the pork chop with salt, black pepper, and fresh thyme. Rub it with olive oil and minced garlic.

    Sear the Pork Chop

    In a hot skillet, sear the pork chop for about 4-5 minutes on each side until it reaches an internal temperature of 145°F (medium). Let it rest for a few minutes before serving.

Making the Demi-Glace

    Soak the Apricots

    In a small pot, soak the dried apricots in water for about 15 minutes to soften them.

    Blend the Sauce

    In a blender, combine the softened apricots, demi-glace, anise seeds, and honey. Blend until smooth. If the sauce is too thick, add a little water to reach desired consistency.

    Heat the Sauce

    Pour the blended sauce into a saucepan and heat over medium-low until warmed through.
