    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for about 3-4 minutes until softened and fragrant.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet. Cook for about 5-7 minutes until the mushrooms are tender and have released their moisture.

    Season the Filling

    Stir in the cumin powder, smoked paprika, salt, and black pepper. Cook for another 2 minutes, then remove from heat and stir in the chopped cilantro.

Red Cabbage Slaw

    Combine the Ingredients

    In a large bowl, combine the thinly sliced red cabbage, grated carrot, lime juice, honey or agave syrup, salt, and black pepper.

    Toss and Marinate

    Toss everything together until well-combined. Let the slaw sit for at least 10 minutes to allow the flavors to meld.

Avocado Mayo

    Blend the Ingredients

    In a small bowl or food processor, mash the ripe avocado until smooth. Add the mayonnaise, lime juice, garlic powder, and salt.

    Mix or blend until creamy and smooth. Adjust the salt as necessary.

Tacos

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Spread a layer of avocado mayo on each tortilla, spoon in the wild mushroom filling, and top with red cabbage slaw.
