    Prepare the Broth

    In a large pot, combine the beef broth, fish sauce, star anise, cinnamon stick, cloves, salt, and sugar. Bring to a boil over medium heat, then lower the heat and let it simmer for about 30 minutes to allow the flavors to meld.

    Cook the Noodles

    While the broth is simmering, prepare the rice noodles according to the package instructions, usually by soaking them in hot water for 10-15 minutes until tender. Drain and set aside.

    Prepare the Garnishes

    Slice the jalapeño and onion thinly. Chop the cilantro. Set all garnishes aside for serving.

    Cook the Meatballs

    In a skillet, cook the meatballs over medium heat until fully cooked, usually about 8-10 minutes. Remove from heat and set aside.

    Assemble the Pho

    In a serving bowl, place a portion of the cooked rice noodles. Top with a few slices of raw beef, cooked meatballs, and a handful of bean sprouts. Pour the hot broth over the top to cook the raw beef slightly.

    Garnish the pho with sliced jalapeños, chopped cilantro, and sliced onions. Serve immediately with lime wedges on the side for added freshness.
