Method

Veal Parmigiana

    Prepare the Veal

    Season the veal chops with salt and black pepper on both sides.

    Bread the Chops

    Dredge each chop in flour, dip in beaten eggs, and coat with breadcrumbs.

    Fry the Chops

    Heat olive oil in a skillet over medium heat and fry the breaded chops until golden brown on both sides.

    Assemble

    Preheat the oven to 375°F (190°C). Place the fried chops in a baking dish, cover with marinara sauce, and sprinkle mozzarella and Parmesan cheese on top.

    Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

Veal Francese

    Season the veal cutlets with salt and black pepper on both sides.

    Dredge each cutlet in flour and dip in beaten eggs.

    Cook the Cutlets

    In a skillet, melt butter and add the cutlets, cooking until golden brown on both sides.

    Remove cutlets from the skillet and add lemon juice and chicken broth, scraping up any browned bits.
