Prepare the Potatoes
Wash and peel the shoestring potatoes. Cut them into thin strips if not pre-cut, ensuring uniformity for even cooking.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove as much moisture as possible.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a handful of the dried shoestring potatoes to the hot oil. Fry them in batches to avoid overcrowding. Cook for about 3-4 minutes, or until golden brown and crispy.

Drain and Season
Remove the fried potatoes with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil. Immediately season with salt and togarashi spice while they are still hot.
