    Prepare the Tater Tots

    Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a baking sheet. Drizzle with olive oil and toss to coat. Bake for 25-30 minutes or until golden and crispy, turning halfway through.

    Prepare the Salmon

    While the tater tots are baking, dice the fresh salmon into small cubes. In a mixing bowl, combine the diced salmon with soy sauce, sesame oil, chopped green onions, avocado, and sea salt. Gently toss until everything is well coated. Set aside.

Spicy Mayo

    Make the Spicy Mayo

    In a small bowl, whisk together the mayonnaise, Sriracha sauce, and lemon juice until smooth and well combined. Adjust the spiciness to your liking.

Walnut Tamarind Sauce

    Prepare the Walnut Tamarind Sauce

    In a blender or food processor, combine the tamarind paste, chopped walnuts, maple syrup, and water. Blend until smooth. Add more water if you desire a thinner consistency.

    Assemble the Poke Tots

    Once the tater tots are done baking, remove them from the oven and let them cool slightly. On a serving plate, arrange the tater tots in a single layer. Top each tot with a spoonful of the salmon poke mixture, a drizzle of spicy mayo, and a drizzle of walnut tamarind sauce. Sprinkle with sesame seeds and garnish with microgreens or cilantro.
