    Prepare the Gnocchi Dough

    In a mixing bowl, combine the ricotta cheese, all-purpose flour, egg, salt, and nutmeg. Mix until a dough forms. If the dough is too sticky, add more flour, a tablespoon at a time.

    Shape the Gnocchi

    On a floured surface, roll the dough into long ropes about 1 inch in diameter. Cut the ropes into 1-inch pieces to form the gnocchi. Use a fork to create ridges on each piece for better sauce adherence.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water in batches. Once they float to the top (about 2-3 minutes), remove them with a slotted spoon and set aside.

    Prepare the Ragu

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion becomes translucent.

    Add Tomatoes and Simmer

    Add the San Marzano tomatoes, salt, and black pepper to the skillet. Crush the tomatoes with a spoon and let the sauce simmer for about 20 minutes, stirring occasionally.

    Finish with Basil

    Add the basil leaves to the sauce during the last 5 minutes of cooking. Taste and adjust seasoning if necessary.

Serving

    Combine and Serve

    Add the cooked gnocchi to the ragu sauce and gently toss to combine. Serve hot, garnished with additional basil if desired.
