Braised Short Rib

    Prepare the Short Ribs

    Season the short ribs with salt and black pepper on all sides.

    Sear the Meat

    In a large pot, heat olive oil over medium-high heat. Add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté until softened, about 5-7 minutes.

    Braise the Short Ribs

    Return the short ribs to the pot. Add beef broth, red wine, thyme, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 2.5-3 hours until tender.

    Shred the Meat

    Once cooked, remove short ribs from the pot and shred the meat using two forks. Discard bones and return shredded meat to the sauce.

Ravioli Dough

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add eggs. Gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer dough to a floured surface and knead for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Filling

    Prepare the Filling

    In a bowl, mix ricotta cheese, grated Parmesan cheese, egg yolk, salt, and black pepper until well combined.

Charred Carrot

    Char the Carrots

    Preheat the grill or a grill pan over medium-high heat. Toss whole carrots with olive oil, salt, and black pepper. Grill for about 15 minutes, turning occasionally, until charred and tender.

Assembly and Serving

    Roll Out the Dough

    Roll out the dough into thin sheets using a pasta machine or rolling pin.

    Fill the Ravioli

    Place teaspoons of filling about 1 inch apart on one sheet of dough. Cover with another sheet of dough, pressing down around the filling to seal. Cut into squares or desired shapes.

    Cook the Ravioli

    Bring a pot of salted water to a boil. Cook ravioli for 3-4 minutes or until they float to the surface. Drain and set aside.

    Plate the ravioli topped with braised short rib, charred carrots, and shaved winter truffle.
