Cooking Procedure

  1. 1

    Prepare the Steak

Remove the sirloin steak from the refrigerator and allow it to come to room temperature for 30 minutes. This helps in even cooking.

  2. 2

    Season the Steak

Rub the sirloin steak with olive oil, then season generously with salt and black pepper on both sides.

  3. 3

    Sear the Steak

Heat a skillet over medium-high heat. Once hot, place the sirloin steak in the skillet. Sear for 4-5 minutes on each side for medium-rare, adjusting time based on thickness and desired doneness.

  4. 4

    Prepare the Merlot Demi-Glace

In a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute. Pour in 1 cup of merlot wine and let it simmer until reduced by half. Stir in 1 teaspoon of fresh rosemary and season with salt and pepper to taste.

  5. 5

    Cook the Lobster Tail

Bring a pot of salted water to a boil. Add the lobster tail and cook for 8-10 minutes or until the shell turns bright red and the meat is opaque. Remove from water and allow cooling slightly before slicing down the center to remove the meat.

  6. 6

    Plate the Dish

Slice the sirloin steak against the grain and arrange on a plate. Drizzle the merlot demi-glace over the steak and add the lobster meat on the side or on top of the steak.

  7. 7

    Serve

Enjoy your hand-cut sirloin with a side of your favorite vegetables or a fresh salad.
