In a small saucepan, combine cherry tomatoes, olive oil, salt, and pepper. Cook over low heat for about 30 minutes until the tomatoes are soft and bursting. Stir occasionally to prevent sticking.

In a mixing bowl, combine ricotta cheese, pesto, salt, and pepper. Use a hand mixer or whisk to whip until creamy and smooth.

Spread a generous layer of whipped ricotta on each toasted focaccia slice. Top with a few spoonfuls of tomato confit and torn pieces of prosciutto.

Drizzle with Vinaigrette
In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper to taste. Drizzle over the assembled toasts.
