Beef Noodle Soup Directions
- 1
Prepare the Beef
Cut the beef chuck roast into large chunks, about 2 inches each. Season with salt and pepper.
- 2
Brown the Beef
In a large pot, heat a tablespoon of oil over medium-high heat. Add the beef chunks in batches, browning them on all sides. This should take about 5-7 minutes per batch. Once browned, transfer the beef to a plate.

- 4
Add Broth and Beef
Pour in the beef broth and bring it to a simmer. Return the browned beef to the pot. Add soy sauce and stir well.
- 5
Simmer the Soup
Reduce heat to low, cover, and let the soup simmer for about 1.5 to 2 hours until the beef is tender.
- 6
Prepare Vegetables
While the soup is simmering, slice the carrots and chop the green onions.
- 7
Cook Noodles
In the last 10 minutes of cooking, add the sliced carrots and rice noodles to the pot. Cook until the noodles are tender, about 7-10 minutes.
- 8
Finish and Serve
Once everything is cooked, taste the soup and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with chopped green onions, cilantro, and lime wedges on the side.
