Prepare the Dough

In a large mixing bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5 minutes until frothy. Add flour and salt, mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise for 1 hour or until doubled in size.

Shape the Pretzel Dogs

Preheat the oven to 425°F (220°C). After the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope (about 12 inches). Place a slice of Muenster cheese on each hot dog and wrap the dough around it, sealing the edges.

Boil the Pretzel Dogs

In a large pot, bring water and baking soda to a boil. Carefully drop each pretzel dog into the boiling water, boiling for about 30 seconds on each side. Remove and place on a baking sheet lined with parchment paper.

Bake the Pretzel Dogs

Brush the pretzel dogs with the beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.

Serve

Remove from the oven and let cool slightly. Serve warm with pickled onions and honey chipotle sauce for dipping.
