Marinate the Chicken

In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and marinate for at least 1 hour or overnight in the refrigerator.

Prepare the Breading

In a separate bowl, mix the all-purpose flour and cornstarch. Set aside.

Dredge the Chicken

Remove the chicken thighs from the marinade and let the excess drip off. Dredge each piece in the flour mixture until fully coated.

Fry the Chicken

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken thighs. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich

On the bottom half of each burger bun, place a piece of fried chicken, top with lettuce, tomato slices, pickles, and then the top half of the bun.

Serve

Serve the crispy chicken sandwiches immediately with a side of your choice of potatoes.
