Brown the Beef

In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, carrots, potatoes, celery, and garlic. Sauté for about 5 minutes until the vegetables begin to soften.

Combine Ingredients

Return the browned beef to the pot. Add the beef broth, tomato paste, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Simmer the Stew

Reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender and the flavors are well combined.

Prepare Cornbread

While the stew is simmering, prepare the cornbread mix according to package instructions, adding milk and egg as required. Bake as directed.

Serve

Once the stew is done, discard the bay leaves. Ladle the stew into bowls and serve hot with slices of cornbread.
