Prepare the Mushrooms

Clean the oyster mushrooms and remove any tough stems. Pat them dry with a paper towel.

Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until you have a smooth batter.

Heat the Oil

In a deep saucepan or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Mushrooms

Dip each oyster mushroom into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Assemble the Sandwich

Spread mayonnaise on the bottom half of each bread roll. Layer with lettuce, fried oyster mushrooms, sliced tomatoes, and red onions. Top with the other half of the bread roll.
