Ingredients for Chocolate Truffles
Method
Directions for Making Chocolate Truffles
Prepare the Ganache
Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a saucepan, heat the heavy cream and butter over medium heat until it just starts to simmer. Pour the hot cream mixture over the chopped chocolate and let it sit for 5 minutes.
Mix the Ganache
After 5 minutes, add the vanilla extract. Stir gently until the chocolate is completely melted and the mixture is smooth. Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the ganache is firm enough to scoop.
Form the Truffles
Using a small cookie scoop or a tablespoon, scoop the chilled ganache and roll it into small balls using your hands. If the ganache is too sticky, you can lightly dust your hands with cocoa powder.
Coat the Truffles
Roll the truffles in cocoa powder, chopped nuts, or sea salt, depending on your preference. Place the coated truffles on a baking sheet lined with parchment paper.
Chill and Serve
Refrigerate the truffles for another 30 minutes to set. Serve chilled or at room temperature.
