Make the Shortcake

Preheat the oven to 425°F (220°C). In a large bowl, mix the flour, sugar, baking powder, and salt together. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the heavy cream until just combined. Do not overmix.

Shape and Bake

Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut into rounds using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes, or until golden brown. Let cool.

Prepare the Berries

While the shortcakes are cooling, wash and prepare the mixed berries. If using strawberries, hull and slice them. Combine all berries in a bowl.

Make the Whipped Cream

In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble the Shortcakes

Once the shortcakes are cooled, slice them in half. Layer the bottom half with mixed berries, add a generous dollop of whipped cream, and top with the other half of the shortcake. Serve immediately.
